For the 36th installment of the STYLSS Mix Series we invited UK based garage and house producer OLLIE MACFARLANE to join us. He caught our attention after dropping a free compilation of Burial remixes back in August 2013. You can download the full compilation here.

STYLSS Recipe 036: Ollie’s “Morning-After-The-Night-Before” Shakshuka
- 1 onion, diced
- 1 red pepper, diced
- 1 orange/yellow pepper, diced
- 2 cloves of garlic, roughly sliced
- 6 tomatoes, roughly chopped
- 2 tsp chilli flakes
- 1 tsp cumin seeds
- 4 eggs
- handful of chopped coriander and flat leaf parsley
- salt and pepper
Dry fry the cumin seeds for about a minute in a large frying pan on a
medium heat, then add the onion with a bit of olive oil and fry until
soft. Add the peppers and after 5 minutes, the chilli and garlic.
After about 3 minutes add the tomatoes, half the herbs, and as much
salt and pepper as you need – cover and cook for about 20 minutes.
Stir if you feel it needs it. It should end up with the consistency of
a thick sauce. If it’s getting too watery you can take the lid off,
and conversely if it’s too solid you can add water. Once the mix looks
ready, stir and make 4 wells in the mix. crack the eggs into the wells
and poach for as long as you need for the egg white to be cooked.
Serve with the rest of the herbs and some nice bread. it’s really good for brunch.
